Pizza!

Hope you're having a nice week! While you are reading this I am on holiday in Croatia, so I am writing this post in advance and scheduling it so, hopefully it goes up on time. I love this pizza it tastes so good, I especially, like the avocado on this pizza!

You Will Need
175g of Classic Ciabatta bread mix plus a bit extra for dusting
3 tsp olive Oil 
Large handful of basil leaves 
225g Mixed tomatoes
125g Mozzarella
1 Avocado 
Splash of lemon juice 
(any other toppings you want on your pizza)

Preheat the oven to 240'c/fan 220'c/gas mark 9
 First, put the Classic Ciabatta bread mix in a bowl and pour 125ml/1/2cup of lukewarm water and 1tbsp of olive oil, then mix until it becomes a sticky dough. 

knead for a few minutes and place in an oiled bowl, cover with a tea towel and leave in a warm place for 15 minutes. 

Meanwhile finely chop most of  basil leaves (leaving a few for the top of the pizza) in a blender with the remainder oil.

Then chop the mozzarella cheese into rough chunks and chop the tomatoes in half and drain (I find squeezing the tomatoes in kitchen roll or a tea towel works best) this stops the pizza base from becoming to soggy.


Next chop the avocado and toss in a bowl with the lemon juice 

After 15 minutes the dough should have risen. Take the dough out of the bowl and flour the surface.


Next roll out the dough to the pizza shape you want. 

Place your pizza on a baking tray or pizza tray. 

Then brush over the chopped basil and pile up topping, mozzerella and the tomatoes. Then bake for 10-15 minutes or until the base is crispy and the cheese has melted. When cooked scatter over the avocado,  remainder basil leaves and season.

  1. This pizza looks so yummy! Usually when we make pizzas at home we buy pre-made pizza crust so good on you for making your own! I'll have to try this recipe out!
